What are you canning now?

my maiden voyage was pumpkin.
you can try mushrooms if you can find them on sale. I love having canned mushrooms on hand. they are good in just about everything.

Made 6 qts of broth and 1 qt of chopped turkey yesterday. It came out beautiful. I was lucky.

Yay I finally get to join this thread!!! DBF got me a pressure cooker for Valentines day! YAY!

Any tips or tricks?

If you have a cooker, then ...I am not sure you can 'can' in those. They need a rack to lift the jars up off of the pot floor.
The ball book is a good investment.

The best thing I did with my new pressure canner was to follow the directions for the "trial" run-through. Put water in it, no jars, and run it through a whole cycle of venting the steam and getting it up to pressure etc. There should be instructions in your little booklet. I actually took some notes on timing and what heat settings worked, etc. It really has helped as I've canned other stuff. Good luck!

ladies and gentlemen I am overwhelmed with stuff.
How to you arrange all of this paraphernalia that goes along with canning? The canners, the pressure canner, the jars the lids the the canned goods... I have every counter, spare room, and floor space covered. I have jars on the back porch waiting for the next big push...

I have a very disorganized utility room. Who ever designed it had no imagination, but My husband was thinking that wire shelving would work, but because there is a door to the outside that gets left open a lot, then I would have dust issues on my canned goods.

Would just plain old kitchen cabinets do best? I can always use more counter space.
What have you done?

where do you keep all of this stuff?
I am going bonkers, well, more bonkers.
