What are you canning now?

I ended up following the instructions that came with the Certo except I added about ten smallish cloves of garlic. I sure hope it sets up. I'll eat it anyway even if it's hot pepper syrup.

Should be pretty ol' hot.

Some of ya'll obviously like jelly and jam a whole lot more than me cause it's about a pita to make. : )
 
doing ketchup this afternoon. I am using the Mrs Wages mixes.

First time I have ever done the ketchup- and it is awesome! Will never buy ketchup again!! I am going to make a few jars spicy by adding some habenerro hot sauce. Next I will be doing pizza sauce. Went yesterday evening and bought 6 more 5gallon buckets of tomatoes...




My feet and back are killing me but I did get DH to help me this afternoon so that is a big help!

ended up with 29 1/2 pints of Ketchup and 6 pints; 1 quart of tomato/Onion juice. Now I am making Pizza sauce and will do a V8 juice also. Hoping to finish tonight.

Well I got my quarts of dill pickles done today

They seem to be sealed well. Going to attempt some strawberry jam, and strawberry rhubarb jam on monday. I have a question though, My local store didnt have any lemon juice ( going by balls canning recipie), So I grabbed lime juice....will this work??? thanks everyone!
 
most everything says to let it all sit for 12 to 24 hrs..before moving them etc...

I do NOT turn them upside down or shake at all..everything stays still..just like it all says.. :)

just my advice...
 
Did some blueberry jam this last Thursday. I used a recipe that did not call for pectin - just berries and sugar. Wow, I was not prepared for how much stirring you do when you dont use pectin. However, the end product is so tasty, its hard to complain.

okay for the grand total for today (August 6th, 2011)

Ketchup - 29 1/2 pints
Pizza Sauce - 13 pints
Tomato/Onion Juice - 11 pints
V8 - 7 quarts
V8 Spicy- 7 quarts, 7 pints

I hope I don't see another tomato for a very long time!

That last 13 quart run went fast! : )

I saw where you canned some sausage; my family used to make bulk sausage up into egg size balls and fry it almost done, put them in a jar and pour the grease over, put a lid on and turn the jar upside down. Period. No processing or anything. Of course this was the "old time" sausage and there would be enough grease to fill the jar half way.
