What are you canning now?

I added pectin, followed the recipie in the sure-jell box....but it is very runny. Like blueberry chunks and juice. So empty the jars, re boil mixture, add more pectin, and re sterilize the jars. New lids right? How much more pectin to add?
 
I have SUPER HOT salsa on the stove right now.
My DH's hands at work wanted me to make some really hot.

I have 6-7 cups of peeled, cored and chopped mixed tomatoes ready to go. Don't know what I'm going to do with them yet. They're just plenty ripe and I can't eat that many fresh.... so I'm torn between salsa or tomato sauce. Mainly because it will dictate dinner tonight & I'll can the rest. If it's salsa, its going to be tacos... tomato sauce & we'll be eating pasta!

Hubby called for pasta... so sauce it is!

Figured I'd share my recipe if someone wants it, its a bit different.

Fogl's Slow Simmered Tomato Sauce:

6 cups tomatoes peeled cored and chopped
1 Medium yellow onion chopped
1 tsp chopped fresh oregano
8 Leaves fresh chopped Basil
3 minced garlic cloves
1 4oz can tomato paste
2 tsp sugar
2 tbsp red balsamic vinegar
1-2 tsp kosher salt to taste
1 tsp cracked black pepper
(option pinch of red chili flakes)

Bring all ingredients in the pot to a boil and reduce to low. Put lid on the pot for 1 hour then stir and remove lid. Continue to simmer and stir regularly from 3-4 hours. Taste as you go, add more salt/pepper to taste.

I pickled a bunch of mine this year, I added 'pickle crisp' and they came out very nice with a good bite! Awesome condiment at picnics.

Yeah, I have 6 pints of that in the wings... I do need to make more, that isn't going to last long. I was just figuring what I made today was going to have to be for dinner as well and save me some work. Not like my husband EVER has made a meal to help me out in his life! HAHAHA
