OMG piece of cake from Ball book
12onces of jalapenos -put those and 1 cup of apple cider vinigar in processor and blend. Pour into pot with 6 cups of sugar 2 Tbsps of lemon juice and 1 more cup of vinegar. bring to boil for 10 minutes-add 2 packages of liquid pectin-hard boil for 1 minute can up! wallah!

I actually just add slivered almonds to the regular plum jam recipe. I cook down my plums, skins and all (super pectin fruit) and then I add the almonds when I add the lemon juice, about 1 minute before I add the sugar. If you toast the almonds first, it works best to get the flavor all through.

I should not have looked before breakfast because now I am HUNGRY! And want some jams on bread. Thank you for sharing that and I will get some at the store today. I only have the whole almonds right now. Yum

I am going to pick up some ingredients to make pickled ginger. I tried it on a salad the other day as a substitute for salad dressing (bored with what I have) and it was delicious. I was surprised.

The store bought uses things in there that I don't want in me and I am going to make my own--hopefully I can process some but there aren't many recipes out there for that. Think I will just water bath it.

They are a stringless bush bean in the cranberry bean family. They can be eaten green as a snap bean, they can be allowed for the pod to become almost dried then shelled and canned, or they can be dried, shelled, and stored. They are a mild tasting firm bean with a nut like flavor.

Quick question... I made a 2 pt batch of Ball Fiesta Salsa tonight. I didn't realize till it was too late that the water was only covering the tops 1/2 inch or so. Once it finishes cooling, if I put it in the fridge, will it be fine for a few weeks? I never heard the lids pop, but the button is down.
 
It will absolutely be good for several weeks in the refrigerator. Would probably be good for months on the pantry shelf but if you have room to keep it cold that would probably be safer.
 
7 qts of tomatoes today. They are finally starting to look like they are going to produce. So far only the cherry tomatoes have ripened abundantly but I need canned tomatoes stocked up for the winter.
