What are you canning now?

I've been freezing blackberry juice, blueberry juice, peaches, apples and such. I plan to can later when I have more time and the weather is cooler. Family is getting jelly for Christmas this year! We've also been making fruit syrups to eat now. Yummy!

I've also frozen corn, spinach, peas, beans and such. My paste tomatoes are just coming in, so it's time to freeze a bunch of spaghetti sauce. I'll dry the late ones that come in during the fall.
 
Lets see so far we have canned:

Salsa
Simple tomato sauce
Peaches
Spiced peaches
Peach jam
Strawberry jam
Peach Butter

PS. We just tore out the spring garden and are putting in the fall garden.

It'sa funny, When I get things together in the kitchen my family looks at me and calls me the "Canning Queen".

They are now saying that the canning queen is at it again.

Going tomorrow to pick grapes and apples to make jam and apple butter and apple sauce. Might make some apple preserves, if I have enough left.

Got some cucumbers today and so they will be made into B & B Pickles. YUMMY!

This is my first year canning, and so far I've canned 14 half-pints of raspberry jam, 8 pints of dilly beans (YUM! They taste great!), and I just did 5 half-pints of peach jam. For Christmas, I'm giving away "Breakfast Baskets," and will include two jars of jam, a scone mix and homemade granola. I love canning and it's so exciting to see the jars start to line up in the basement.

My next venture will be pear jam and carrot cake jam (both from one of the Ball books), as well as canned pears. We have two pear trees that have always dropped hundreds of pears that just rot...not this year!

Alright, I took a pic of one jar each of the stuff I have canned so far. Tomorrow I will be making my Elderberry jam.

They are zucchini sweet pickles, corn, salsa, cinnamon applesauce (I also have sour applesauce but they look so alike I didn't put it), and apple pie filling.

And, just for S's and G's.......I took a pic of my storage solution for my dry goods. This is an old rack from the old days when we used video tapes and a bunch of canning jars full of all sorts of rice, pasta, grains....keeps everything perfectly fresh and looks kinda cute too.

I'm 34 and having financial challenges due to an unemployed partner. My mom is 57. Clearly she doesn't get my "localvore" goals, despite my having been on this for over a year.

Yesterday she said, "And I know you're working so hard to save money by canning but is it really worth all the work?"

She just doesn't get it.

As for what I've canned this summer, it's not as much as I wish it were. The local crops in the PNW are all behind schedule. Heck, I just got my 1st (and 2nd & 3rd!!) yellow squash today.

Plan to can the heck outta some tomatoes as soon as I can get my hands on a few cases of them from the local farms. Not sure how much my own bushes will produce as this is my first year of hard-core tomato plants (about 12-15).
