What are you canning now?

A little jealous of all you folks with berries and such growing in your back yard.  I planted some peach trees, and this is the second year in a row that the dang chipmunks made off with every single little peach!!  Both my trees are empty!  :mad:    We have a few wild raspberries, but certainly not enough to make anything with.  You can only pick about 5 at a time.  Oh-well, that's why there are so many u-pick places I guess.  Not sure of any here in NH that do blackberries though...

Well since it was 107 outside today we stayed inside and put up 169 ears of sweet corn in the freezer, We have about three 5 gallon buckets of yellow squash and zucchini to do next.. Does anyone have a good recipe for zucchini pickles?

I don't have a good zuc pickle recipe, but I have an AWESOME zuc relish recipe if you're interested?

Strawberries are done here and the ones in the store are cheaper but have no flavor. Blackberries and Blue berries are expensive to buy. Raz's are about 3.75 a pound to pick. I do like Raz and Strawberry jams.

With these new books there are a few strange ones I will try. lavender jelly, Purple basil wine jelly, Wine and roses jelly. I was going to do Dandelion jelly but there are none now. In the beginning of spring there were loads. You need 365 flowers. I have one for Wild violets too but the the time has past. Perhaps next year.

I did a rhubarb grapefruit did I mention that. Strawberry pineapple and rhubarb pineapple too.
Your recipe for dandelion jelly says specifically how many blossoms you need! HAHA! Mine just reads "4 cups blossoms" Much easier!

But sadly, I missed them this spring too. So sad...we love that jelly!
 
Idk about them but I would love the zucchini relish recipe!

Zucchini Relish

10 cups chopped zucchini (the original recipe doesn't say how fine/course to chop but I like it pretty fine, so I use my food processor on pulse, not enough to puree though!)
4 cups chopped red and green peppers
4 cups chopped onions
1/2 cup pickling salt
1 TB corn starch
5 cups sugar
1 TB turmeric
2 tsp. celery seed
2 1/2 cups white vinegar

Mix zucchini, peppers, onions and salt. Let stand overnight in the refrigerator.

In the morning, rinse well with cold running water and drain.

Add remaining ingredients, mix well and simmer 30 minutes. Pour into hot, sterilized jars and attach lids and rings. Process in boiling water bath for 15 minutes for pint, 10 minutes for 1/2 pints.

Canning green beans out the wazoo! I have a question, we cook our beans with a little bullion in the water. Could I can with a bullion cube in them?
I don't know for sure. but . . .bullion has plenty of salt, like all salt, and I know someone who cans fish and that has meat and oils, perhaps check the requirements of canning meats and compare pressure and times? Maybe someone has tried this and will chime in. I bet they are tastey beans.
 
I have a Sweet Zucchini Relish and a Chutney. A Zucchini Orange Marmalade but that is all. If you can't find anything on line you might try the library if you have one.

I also have a Yellow Squash and Tomato chutney too.
