Salmon Patties

1 can Salmon (I like Red)
1 egg
1 cup mashed potatoes
1 stack saltine crackers crushed into very fine crumbs
Cornmeal

Make the mashed potatoes and crush the crackers into crumbs.

Drain the juice from the salmon and place the salmon in a bowl.
Mash the salmon with a fork until it is all lose and separated.

Mix in the egg and the mashed potatoes.
Thicken with enough cracker crumbs so that it will hold together when you shape them into patties.

Form the patties and coat them with cornmeal, place in refrigerator until ready to cook. Fry on med. heat in a little oil until golden brown. Drain on paper towels.

You can make these the night before and fry them when you get home from work the following evening.

I make these with leftover mashed potatoes from the evening meal and they are ready to cook for supper the next day.
 
Re: the question about eating the guineas, they were delicious! I didn't keep them penned or anything, they used to free range. We simply couldn't take another day of them flying up on the roof and screaming at dawn, so we culled three of the six. I skinned them, rubbed them with butter, and crammed in each bird a handful of fresh herbs and a half a lemon. I baked them in a deep pan with foil over the top. The dark meat was pretty tough, but the white meat was delicious! Kind of like a gamier chicken.
And I love all these leftovers ideas!
 
extra Veggie soup at our house gets put into a casserole dish and topped with refridgerated biscuits.. Spread a lil cheese and pop in oven YUMMMMMMYYYYY

If you wanted to make it with just one can of tuna you could just cut the amounts down.

I started out with 8 guineas 2 years ago and I have 3 left. We are on the Southern border of the Big Thicket National Preserve in Texas and we have a lot of wildlife here. The three surviving birds are the only three that have always come into the chicken house to roost at night.

I had been kicken around the idea of getting some guineas and raising them for meat but if I was going to do that I would have to keep them pinned up or the wild animals would eat them. I'm just not sure I want to go to all that trouble of building a new pen just to raise them in.

My Mom made potato pancakes from leftover mashed potatos.
Just add an egg or two (depending on how much potato you have), some chopped onion and saute in oil.
