I had some leftover chicken in the frig I needed to use up. I found this recipe and used my leftovers to make it. This is very good and it's quick and easy especially if your using up leftovers.

Chicken and Potato Soup

Ingredients

· 2 tablespoons butter
· 2 1/2 pounds skinless, boneless chicken breast halves - diced
· 1 large onion, diced
· 6 medium potatoes, diced
· 1 (15 ounce) can carrots, drained
· 1 (10 ounce) can peas, drained
· 1 (11 ounce) can corn, drained
· 1 cup milk
· 2 cups water, or as needed
· hot pepper sauce to taste
· salt to taste
· ground black pepper to taste

Directions

1. Melt the butter in a large pot over medium heat, and cook the chicken 10 minutes, or until evenly browned and juices run clear.
2. Mix the onion into pot with the chicken. Mix in potatoes, carrots, peas, and corn. Pour in milk an enough water to cover all ingredients. Season with hot sauce, salt, and pepper. Bring to a boil. Reduce heat to low, and continue cooking 30 minutes, stirring occasionally, until potatoes are tender.

Using our leftovers is apart of our everyday life... I'll turn whatever I have into something... had alittle bit of home spaghetti sauce with meat added it to a couple cans of different beans, canned tomatoes for chili the other night.

If we have enough leftovers for another meal then I usually just serve it again a couple of nights later. If it's not enough for another meal I use the leftovers to stretch my dog's food, which can be a big money saver for me as I have two 150 pound mastiffs.

In the case of the leftover chicken it was leftover from a family get together on new year's day and we had already eaten chicken 3 times and there was still enough for another meal so I finished using it up in the soup...we really enjoyed it.


This is my daughter with may babies Thanksgiving morning.

BettyR - that soup looks so good, I am totally craving it right now!!! Mmmmm - YUM!!!

I usually make a quiche or shepherds pie out of left overs. Or toss it all together with something like noodles and call it good. However, we don't typically have left overs too long because if there is anything left over it gets eaten by someone for lunch.

I know this was directed at someone else but I just wanted to say that I am a huge fan of salmon patties and I do like tuna. I once made salmon patties and used tuna as I didn't have salmon at the time. The only thing I can say about the result is GRRRROOOOSSSSS!!!

It really is worth going out of your way to get the salmon.
 
Depending what's left over, I can usually turn most veggie or meat into a big ol' pan of enchiladas. Now, THAT's a leftover that is hard to turn into anything else!
 
We had 2-3 ounces of broiled tuna steak leftover from dinner a couple nights ago. Today I chopped the salmon, added can of tuna (drained), and made our usual tuna salad recipe from it. Very tasty with lunch.
