I'm making up several jars of this one today for farmers market sales.

Rocky Road Brownies
Fills a quart jar, yields about 16 brownies

1 cup sugar
1 cup flour
1 Tbsp instant coffee granules
1 Tbsp baking powder
1/2 tsp salt
1/2 cup chopped walnuts
1 1/2 cups miniature marshmallows, divided
1 4-oz bag semi-sweet chocolate pieces
1 (32 oz) quart glass jar with lid and band

Combine sugar, flour, instant coffee granules, baking powder and salt in a large mixing bowl, stirring to blend evenly.

Place mixture into a jar. Pack firmly. Layer walnuts, miniature marshmallows and semi-sweet chocolate pieces into the jar in the order given. Cover with lid

For Directions/Gift Tag
1/2 cup unsalted butter, divided
3 large eggs
1 Tbsp vanilla

Preheat oven to 350º F. Remove mix from jar, keeping layers separate.

Melt semi-sweet chocolate pieces, 1 cup miniature marshmallows and 1/4 cup unsalted butter in a saucepan over low heat.

Beat 1/4 cup butter, eggs and vanilla for 5 minutes, using the highest speed of an electric mixer. Add melted chocolate mixture to butter mixture and blend on low speed. Stir in sugar mixture, walnuts and remaining miniature marshmallows just until ingredients are moistened.

Pour batter into a foil lined 9- x 9-inch baking pan. Bake at 350º F for 35 to 40 minutes, or until edges start to pull away from the pan. Cool. Lift foil and brownies from the pan. Discard foil. Cut brownies into 2-inch squares.

Kim - Do you wide mouth jars so you can get the layers out easily? How much do you sell these for at the market?

Most of the time I use wide mouth jars. But sometimes I use small mouth or recycled commercial jars if I have one that will work. Usually it's more a matter of getting everything in there and layered nicely.

Edit: Oooppsss, forgot the price question. It depends on the item, I can get $6 - $8 a jar for most of them. I try to price them so that I'm making $4 - 6 per jar. I like to line them up and fill them in assembly line fashion - saves time.

Wonderfull to see all the mixes.
I did something Simple green
peas stacked in a jar with1 bay leaf 3 total
in between
the layers.and onion flakes,
attached a receipe for the best split pea soup.
From family cook book.

Peas, ...Wash and rinse ,set peas over night in water
Rinse the day of use.
add to 2 qts boiling water with
bite size chunks of ham. med boil for an hour
add
onion powder,2 tablesp.
1 teasp. Celery flakes ,1 garlic clove( remove before )serving.
1 lb.. sliced carrots, add small red potatos washed with
skins on. cut in half.
more water may be added if need
low simmer for 1more hour.

1 package (2.75 ounces) regular or no-fat country gravy mix
2 tablespoons chicken bouillon granules
2 tablespoons dried minced onion
2 tablespoons dried celery flakes
2 teaspoons dried parsley flakes
2 1/2 to 3 cups uncooked wide egg noodles or other pasta

Pour gravy mix into wide-mouth quart jar. In small bowl, stir together bouillon granules, onion, celery and parsley. Pour into jar to make second layer. Add noodles. Close with lid; attach gift tag and decorate.

Gift tag directions:

Empty contents of jar into a 4-quart saucepan or Dutch oven. Add 8 cups water; heat to boiling on high. Reduce heat to medium; add one 10-ounce or two 6-ounce cans cooked and chopped chicken. Cover and simmer for 5 to 6 minutes or until noodles are tender, stirring occasionally.
 
Hey Kim, great thread! To answer you question on the arborio rice, it's a yes or no kinda answer. Sure you can use any rice you'd like, but arborio gives off a lot of starch, which in turn leads to a very creamy and classic risotto. Could you use other rice? Absolutely! You may need to add a touch of cream to get a "cremier" mouth feel to the rice. Or, it will be less creamy but still tastey!

Found some dry dip mixes for ya.
------------------------
Bacon Dip Mix
2 tablespoons instant bacon bits
1 teaspoon instant beef bouillon
1 tablespoon instant minced onion
1/8 teaspoon minced garlic


Combine all ingredients in small ziploc bag. Label as Bacon-Flavored Dip Mix. Store in a cool, dry place and use within 6 months.
Makes 1 pkg. (3 T) of mix.


Bacon Dip:
Combine 1 cup of our cream and 1 package of mix. Chill at least 1 hour
before serving. Makes about 1 cup of dip.

Chili Cheese and Bacon Dip
6 Tbs. chopped onion flakes
4 Tbs. dried bacon bits
2 Tbs. granulated garlic
4 Tbs. cheddar cheese powder
2 Tbs. chili powder
2 tsp. cumin
1 tsp. cayenne pepper
1 tsp. salt


Measure into a ziploc baggie, seal and shake to combine.

To make Dip:
2 tablespoons of dip mix
1/2 cup mayonnaise
1/2 cup sour cream.

Cover & chill at least 2 hours before serving

Dill Vegetable Dip Mix
1/2 cup dried dill
1/2 cup dried minced onion
1/2 cup dried parsley
1/3 cup Spice Islands Beau Monde seasoning


In a small glass bowl, combine all the ingredients and place in a container.
Makes 1 3/4 cups.



To Use:
1 cup mayonnaise
1 cup sour cream
3 T Dill Dip Mix
In a medium bowl, using a wire whisk, combine the mayonnaise and sour cream with the Dill Dip Mix. Refrigerate the dip until ready to serve with
raw vegetables or as a topping for baked potatoes. Makes 2 cups.

Onion Dip
2 C. powdered milk
3/4 C. cornstarch
1/4 C. beef bouillon crystals
2 T. dried onion flakes
1 tsp. dried basil leaves, crushed


Measure all ingredients into a Ziploc Bag. Shake well, transfer to vacuum seal bag, seal and store up to a year.


To Use:
1/3 c. Onion Mix per recipe. Blend with water for soup, sour cream for dip, etc.

Herb Veggie Dip Mix
1/4 cup dried parsley flakes
1/4 cup dried thyme leaves
2 tablespoons dried tarragon leaves
2 tablespoons dried onion flakes
3 teaspoons garlic powder
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper.

Measure all into a ziploc baggie & seal until ready to use

Herb Mix Dip:
1 T. mix
3/4 cup sour cream
1/4 cup mayonnaise
1 teaspoon lemon juice.

Serve with assorted fresh vegetables.
Yield 1 cup dip

I only had one dip mix recipe before this post. Here it is:

Mexican Dip Mix
1/2 cup dried parsley
1/3 cup dried minced onion
1/4 cup dried chives
1/2 cup chili powder
1/4 cup cumin
1/4 cup salt
2 Tbl garlic powder
2 Tbl dried cilantro

Mix together thoroughly and place in an airtight container.

For Directions/Gift Tag:
3 Tbl Mexican Dip Mix
1 cup mayonnaise
1 cup sour cream
Mix together and refrigerate until serving.
