Shape wise, white Cornish type fits. Doesn't mean she is because they're not the only breed built that way.

She flew over a wall and into my partners workplace from a not so nice home with a not so nice dog that chased her.

She's a Variety of Aseel.

A pure white aseel or Shamo hen that came out of nowhere, now that’s special indeed! Gorgeous bird
