What Can I Cook With Pumpkin Guts and Seeds?

With the same spices as pumpkin pie (cinnamon, clove, nutmeg), I think it tastes very much like pumpkin pie. My husband disagreed. I make it as a custard sort of thing, not in a pie shell, as I'm gluten free. I can't make it too often because I could eat the whole thing...
 
for crunchy toasted seeds you need to let them dry overnight. pie filling is made from the rind of the pumpkin, not the guts. i give the guts to the chickens. been using the pureed baked rinds for pumpkin bread and pumpkin pie. yummy!
