what chicken is laying?

You could use trapnesting. That is what we do. I know which egg is laid by every chicken and how often they lay. It takes some dedication to check them and release daily, but if you are just curious it wouldn't be a bother at all.
 
You can usually tell if a hen is laying by picking her up and between the end of the breast and the vent are two bones, if you can fit two fingers between them easily they are laying. This works on all breeds of poultry even bantams! Good luck!
 
Not sure about quail..thats something thats new to me. I just got my first bunch of quail about a month ago!
 
I can tell which one of my girls lay eygs by their reaction to me. The younger of the 2 puts her foot up on the pen and makes a big deal with all kinds of noise. The older one looks at the egg walks back to the front of the pen and cocks her head sidways. Like ok I did it come pet me and move on. If I dont pet her when I get the egg she makes this weird noise I cant decribe and is grumpy until she lays again. The younger one for some reason is really aggressive to me. She hasnt been this way. She has untied my shoes and even flew up at me as she was going to attack. Other days she rubs up on my leg like a cat. I guess they get a little moody like the rest of us.
 
Well it seem your guys where right!!

One of our Sussex is the laying we caught her this weekend!!! she kicks all the other birds out of the coop and picks her nesting box !! - very funny, yesterday i came out to check for eggs and she was in there so i shut the door real fast - I hope that doesn't affect her, she left after i did that.

she layed Saturday at 130 and yesterday at 330 so 26 hours today should be 530 and then i expect her to skip a day because 730 is dark

the only thing is we think maybe someone else is laying to because her eggs are lights and a bit bigger than the other eggs we got or maybe she is just getting into it still?

the eggs are about 45 grams the small eggs where 30-35 grams

Though out the day the combs change but when they are ovulating their combs turn bright cherry red just like the roosters. Your egg looks like the eggs my SLW laid.

I'm just finishing eating my first two eggs - they are 30 weeks old. I have two Americaunas and one Gold Laced Wyandotte. The eggs are light tinged blue. One of the former has been squatting when I touched her the last few days - I had no idea that was a sign! I hope you're as excited as I am - first chickens, first eggs.
