What color eggs will the chicks lay from my F1 olive egger and black australorp cross?

You may get some olives, but some will be brown. It all will depend on who gets the blue egg shell gene and who gets the brown egg shell gene.

Only in that you won't know what he's contributing. Same result on offspring egg color, if you are positive he's an F1 cross. If he's a multiple generation olive egger, then your chances of getting brown eggs from the offspring go up.
