I've never seen a mottled bird molt into less mottling.
Most always they get more white. I've had older birds end up pretty much solid white a few times.

I’m not sure why. It’s what I’ve read about them. The original source of the heavy mottling was a hen of unknown origin bred with speckled sussex and exchequer leghorn. It doesn’t talk about it here, but you can see from the pictures that the chicks have more mottling than the adults https://www.backyardchickens.com/reviews/aloha-chickens.11541/gallery.Oh ya?
