My dutch red shallots grew stupid crazy too. It's like the bulbs grew their own littler bulbs, it was just wow. I got them curing, gave a LOT away, still got tons left. I think I am going to do a mass pan cook here. Do them with some garlic, some spices, sautee the heck out of them just like Id love to eat them with ANY other food, then freeze dry them in more manageable portions. That way they are good, 1 month, 1 year, 10 years later, when I want some, I grab a packet, add water, or just throw into whatever Im cooking and poof, instant heaven!!
Ill keep a big bouquet of them for planting later this year, probably Novemberish for harvest again, next june or so.
