What did you do in the garden today?

I used a half inch pvc pipe to bend the tips of my tomato cage. I made one to show, I stuck it in my grow bags after it was filled, it went right in and doesn't wobble like how it does with out the hook.

I'm about 4 pages behind... Still haven't caught up.

I FINALLY managed to get out to the garden and dig up the yacon. I never seem to get the super big tubers like some people I've seen online. I did peel everything I harvested and now trying to decide what to do with it.

First attempt at making fruit leather with pureed yacon and applesauce. Mixed in a dash of cinnamon. It's in the dehydrator now. We'll see how it turns out! 🤞🙏

I've got the bigger tubers in the frig soaking in some water with citric acid to keep it from oxidizing. Here's my options -

1. Make yacon chips
2. Yacon syrup
3. Cube and freeze it.


Not sure what I want to do with it...
 
Cold air mass is settling in from northern Canada. We won't see above freezing until after the New Year, and the winds will give us a chill factor down to -40F. Winds are howling today, currently feels like 5.
Animals fed.
Hydraulic leaking again, so removed it and will replace.
Heading to dentist for the start of getting a crown. Good grief, I realized we're all held together with love, pins, rods, and glue! (Can't say I'm not a little disappointed that there isn't a little duct tape in that mix.)
 
FYI I used to work at a seed and hardware store . The sprouting seeds came out of the farm seed bags , Red clover , alfalfa and such. Seed was not treated. You could also buy 5 bean dry bean mix at the grocery store.

I buy my stuff in bulk and snatch it from the bags as well. I have a local seed dealer I can pop into.
Clover, alfalfa, flax, barley
sprouts for lentils I grab at the grocery by the one pound bag (by the dried beans) as that is not a common thing to grow here, and thus, seed co-op doesn't have it.

HAD COLONOSCOPY yesterday plus they went down my throat.

I had to look that up. I can't grow it up in Michigan, I bet, and frankly, I wouldn't. It contains inulin, an indigestible sugar. Which give me gas. I had some GF protein/fruit/nut bars and if I ate one, I was gassy. I made the mistake of eating two only once. :eek:
It's actually really good for diabetics because it doesn't affect their sugar.

Ive eaten it fresh. It's good but has the consistency of water chestnuts which I don't like. I'm trying to find other ways to eat it because I like the flavor, just not the texture.

The fruit leather did not turn out right. I spread it on parchment about an eighth inch thick. The end product is a bunch of hardened dust stuck to the parchment. Grrrr....grumble.

I went ahead and chopped some into chips which are currently in the dehydrator. Wondering if I should try again on the fruit leather or just give up and cube & freeze the rest for smoothies. 🤔
 
What was in the fruit leather? I've never made it. Just thinking out loud, but maybe if there wasn't enough sugar, it would dry too crumbly...?
I filled my blender with yacon, then added a pre-packaged cup of applesauce (No Sugar Added) along with a dash of cinnamon. Not sure how much those pre-packaged cups measure out to? Maybe a half cup? I added a tsp of stevia just because some of the yacon was more watery than sweet as it hadn't cured enough. Nothing else... When I spread it out on the parchment, it was about 1/8 inch thick. I think maybe I cooked it too long? I cooked it for 12 hrs at 113 degrees.
