What did you do in the garden today?

I made stuffed shells out of zucchini/yellow squash last night. We don't eat pasta so I sliced the squash thinly & baked them for a while to dry them out, then wrapped them around some ricotta mixture, topped with meat marinara & cheese & baked. It was SO good! We have leftovers for dinner tonight. :drool

I have the canner out! :eek: I have blueberries & rhubarb thawing, going to make blubarb jam. I was going to make dillybeans but then I found like 6 jars left from last year. Doh! I thought they were all gone but I was wrong. So jam it is & I will blanch & freeze more beans for now.
That sounds good! Gives me the idea to dry some zucchini and make zucchini lasagna sometime. And that would be a great way to preserve zucchinis for winter if they're dried out enough.

I watered the heck out of my garden this morning since it's going to be pretty hot the next few days, up close to 100 degrees Monday and Tuesday, actual temp. I'll water it heavy tomorrow morning, too.

& that reminds me I should make chips out of my weird volunteer cross! :yesss: I have another ready to pick - on the dehydrator it will go.

I do like zucchini lasagna & I have one in the freezer, but I actually like my 'stuffed shells' better because I hate cutting thru the lasagna, it always pulls the strip of squash out & doesn't cut right. The shells were easier.
 
My Scarlett Runner Beans are making up for lost time. (Late spring and early summer drought in upstate PA had everything struggling for awhile.)
