I use an ancient recipe: I keep milk a day (summer) or two (winter) outside the fridge then boil it. drain when it cools down a bit. that's what people did in the past when there was no electricity and fridge.

Here is the recipe I used this time, I wanted to try one with the heavy cream. There are basic recipes that just use milk & vinegar or lemon. Or recipes that use rennet, which I think are better.

No, TJ is correct, that's mascarpone. Which is delish! But...I do use the home made ricotta to make sweets. DH is a peanut butter freak so I beat some into the ricotta & added a dash of cocoa powder & it's super creamy & good.
My dill readily self seeds itself. There is a reason it is sometimes called, "dill weed."
This is so true! For years I've had dill popping up all over the garden. & when it starts to come up I can't tell if it's dill, cosmos or carrots. :lau

Wow! That all looks fabulous! I'm so impressed. I would love to make burrata - have you ever tried that? I've done mozzarella & it didn't come out great.
 
Speaking of mice, the mice are so out of control here my husband made an electric fence to go around the RV & his truck to keep them out. :lau It's been working too - knock on wood. He has bucket traps inside the fence & all sorts of traps in the RV & nothings getting in.

Last year he also built what looks like the 'catseye rodents exclusion system' that goes under the siding so the mice can't get in. That has also worked great, no mice inside since. Or chipmunks either. His looks sort of like this:

I opened the door of my car the other day & there was a mouse sitting there on the bottom ledge of the door (so not actually IN the car) staring at me. 🤬 That was a fun drive home.

No I haven't made a Burrata. Mozzarella is difficult to make consistently. Trying to make mozzarella consistently is what made me give up on cheesemaking.
3-4 years later I decided to try making Cheddar skipping the so-called beginners cheese Mozzarella. Cheddar is 100 times easier to make for me.
