Didn't get much done in the garden yesterday - my knees were hurting so much I could hardly walk. They seem a lot better today (jinks - I'll be crawling by noon - lol). I did try to use up some of the zucchini, though. I made a zucchini cake with cream cheese frosting (after just telling you guys how little I bake these days!), and also used some for dinner, as well. When going through recipes, one person said they grate up their extra zucchini and freeze it so they can use it for baking throughout the winter. I thought that was brilliant! You mean I don't have to eat zucchini for breakfast, lunch, and dinner, so that none of it gets wasted?
I think we're going to have a zucchini-grating party real soon!
