We no longer do canning, but when we did,,,,,,, we used this juicer for tomatoes. Still have the machine. Nobody around us, does tomato canning anymore:hit

How do all others here process your tomatoes? As sauce, or as diced, whole, or other fashion:caf

Luckily I am not allergic to them. It did hurt like the dickens though.
I am still seeing some flying around.
They are way more aggressive than yellow jackets by the way.

The easiest way to tell the difference when they are airborne is the rear legs. The European Paper Wasps dangle the rear legs while yellow jackets keep theirs tucked up to the body.
Oh and the wasps have yellow/orange antenna while the jackets have black.

I quarter my tomatoes when canning.
 
I have tried a lot of things canning tomatoes . I have one of those Victorio strainers but still prefer the Foley food mill . Easy to use and easy to clean . Here is what I do for tomato sauce and paste . You can use any type tomato . Roma types have less juice but with my method juice does not matter . You can skip blanching and peeling . Just core and quarter and run through the blender . Cook the juice or try it not cooked . Run this juice through the Foley mil to remove seeds and skin . Now here is the time saver . I run the juice from the mill through a cider press bag . This leaves the pulp in the bag and nearly clear juice out the bottom . I put the bag in a colander over a pot to catch the juice . You can can the pulp as paste . For sauce just add the pulp back into juice that has not went through the cider bag until you have the thickness desired . No boiling to reduce to thickness desired . Now I can the nearly clear juice to drink . I always drank the clear juice left from a bowl of sliced tomatoes . So my method cuts out a lot of heat in the house . I do blanch and peel canned tomatoes but do that outside on the turkey burner . Water bath canning also .
 
@Wee Farmer Sarah I have tons of green tomatoes too & I AM hoping they all ripen at the same time so I can can them! I planted some roma type tomatoes for the first time this year & there are so many tomatoes on the vines!
I still have canned sauce left from last year. I’m thinking I’ll make marinara sauce then freeze it to extend its shelf life. I planted 6 Roma’s this year but I think these are smaller than the ones I planted last year. We’ll see. I can just about all of mine. I also have 2 smaller sized tomatoes for slicing, etc and a cherry tomato that is taller and wider than me. LOL. The Roma’s make excellent sauce.

I don’t peel. They either get cooked on the top of the stove or oven roasted. Oven roasted has a sweeter flavor. After they’ve cooked I send them through the food mill. If the sauce is too thin I cook them down some more then I can the sauce.
 
Ouch! Wasps suck! Thankfully you arent allergic!

I blanch, peel then quarter & water bath can them. Or I make salsa. I dont like marinara or a typical sauce, I use crushed or diced as my sauce & I will just do that when I open the can if I need. I'm a picky eater, lol.
I just make plain sauce. I eat a lot of pasta, homemade pizza and Indian curries that use tomato sauce. I might make some salsa this year since my hot peppers are doing well, but it depends on the tomato harvest. I’m a picky eater too and use as little commercially processed foods as possible. I’m also a “flexitarian” because at least 1/3 of my food is vegetarian. This is what works for me.

Sauce. Always sauce. I have that machine, it fits on my kitchenaid. Still waiting on tomatoes....ANY tomatoes.

Garden still squishy from 4 inches of rain the other day. GORGEOUS DAY! We earned. SUNNY DRY AND only 80 with a breeze. The girls spent the whole day outside while I cleaned the coop and run.

I kicked the chicks out of kinder garden in the workshop and into the big girl coop. They'll figure it out.

I clean up their nasty mess in our wood shop.

The broodies still need their cages cleaned. DS can do that tonight and then put the beasts back to bed.

I worked on some picture frames for FIL. I need to buy some picture points when I go into the city.

I cleaned the barn and stalls.

Finished all the laundry.

THEN I decided it was too nice a day to let pass without harvesting some honey. I only took one fall today, but next week, I'll snag two more. I also added three more bars. (I have a top bar hive.)

Needless to say, we're having chicken and biscuits with honey for dinner!

I managed over the last week to be stung a total of 12 times by the now gone to wasp heaven European Paper Wasps. :mad:
Those buggers have a very bad attitude and very painful sting.

OH My take care .... We went to the lion king now need to feed dogs but yes if your able go see the movie it was Beautiful and amazing

I'd be in a ball in tears. Not for the stings (Which are TERRIBLE) but have a serum allergy. I go through hell on a broomstick 10 days after being stung. (And yes, I still have bees.) Glutton for punishment.
