armadillo and opossum are greasy. Gator is ok, tatstes like 'off' chicken to me. Bison is grand, Not a fan of deer meat, taste of rancid beef to me. Snake is blech.....But I'm a seriously seriously picky eater.
I've never had armadillo and the only 'possum I've had was in stew ... but that was delicious! I agree on the gator, although I've only had it a couple of times. It was okay, but I wasn't impressed. Snake? Nasty! I don't like the texture, but I have to disagree on the venison. Most people don't know how to prep it. The fat is almost non-existent, so you have to add your own. I marinate mine in olive oil, orange juice and whatever seasonings appeal to me at the moment ... but always with lots of onion and garlic. You can substitute pretty much any acidic liquid for the OJ - AC vinegar, lemon juice, red wine, you name it. Let it sit for a couple of hours, then cook as usual.
If you mix ground venison with ground beef, you get the most amazing burgers ... no marinating required. We mix it with ground beef and pork for the most amazing meatloaf!
We used to eat a lot of squirrel, but it's too much trouble to clean. I can still see my little brother's excitement when he kept finding "wishbones" in his squirrel dinner ... 'cause we told him it was chicken!

I'll stick with buffalo, for my weird meat. Otherwise the herd of cattle on the other side of the fence is SO easy. LOL.
 
Good morning all. I see we're still on the meat topic. I love venison, however have not had it for quite some time now. Bison meat is great. Before I moved to New England I could drive to a Bison farm and buy meat. Little fat so you have to be careful cooking it. I've had bear once. I was given a small roast and made a stew out of it. It was quite tasty. Well, Winter sent a reminder that it's still going on. We got a snow / sleet mix overnight and freezing rain scheduled for later. That's OK. I had to order heating oil. The tank was getting pretty low. I found my little BR Princess sitting on 3 eggs in one of the nest boxes yesterday. She was not happy when I removed them. So I'm wondering if I should let her try hatching in a month or two. I think I'll start picking up wood for the last raised garden bed this weekend. Once I get that framed out I can start on the chicken coop addition. Today I'm working on my living room ceiling and baking oatmeal cookies. Hope you all are having better weather. Icy here. Schools are closed in the surrounding counties (and this one too). Kid is home sick, but only a cold, so not too bad. @Wee Farmer Sarah the oatmeal cookies sound good! Maybe I'll have to break out the mixer and bake something!

Got a chick catalogue yesterday. It is from a small hatchery we have purchased from before. They do not have any pics in the catalogue or online, but still tempting! I've already placed my order with them, before the catalogue arrived. I need to call them anyway to see if one breed was placed in the incubators - they didn't think that breed would be producing eggs yet to be set in the incubator in late Jan. If not, I have a back up breed I'll request. If only my normally broody girl would become broody! She needs to raise me some adopted chicks!

I make a 1/2 batch of the oatmeal cookies from the recipe on the box then I double up on the oats. Then I make two logs out of them and freeze. Then I have slice and bake oatmeal cookies on hand for quite a while. Your weather sounds like mine. I’m not sure if I want to shovel the slush.
 
Good morning gardeners. I went out to check for sprouts and found some. Basil and alyssum are up along with one tiny forget me not.

We've had freezing or near freezing temps just before sunrise but the potatoes are still ok. So are a few weeds.

Mustard, Mexican heather, thyme and celery. I'm going to put a cover over the celery at night and feed it. I had to transplant it and it's struggling.

@Acre4Me. I hope the kiddo feels better! What's your backup breed?

@penny1960 that's interesting that bears take on the flavor of fish. I've never heard anyone mention that, but then again I don't know too many folks that have lived in AK.
