Well it’s been a year since I’ve made zucchini bread so I shredded the squash then squeezed them dry. Oops! The recipe I was using didn’t call for that so I used a quarter cup of orange juice to replace the liquid. I made 4 mini loaves. I sampled a piece after it cooled. It was tasty. The other 3 loaves are basking in the freezer now along with the butter I just made. I bought a small air fryer @Acre4Me. I love it. Frozen French fries are awesome and I can have fried chicken more frequently now. What’s really nice is that it cooks nicely and doesn’t heat up the whole kitchen. Of course, there’s the healthier fried thing also.
Not even sure if frozen squash will even be good in bread later on or if it'll be too mushy! But I gotta try something, I have so dang much of it.
