What did you do in the garden today?

Southern Pepper Sauce (from addapinch website). Use on cornbread, greens, peas.

1C white vinegar
1Tbsp sugar
1 tsp kosher or pickling salt
1tsp olive oil (optional for extra hot pepper sauce)
About 30 small peppers*

clean jars and lids (I sterilized the jars for 10 min, submerged in boiling water).

mix vinegar, sugar, salt, optional olive oil in saucepan to boiling.

fill jars with peppers an pour hot vinegar mixture over the peppers, leave about 1” headspace.

remove air bubbles. Clean jar rim. Place on lid, tighten ring. Allow jars to seal on countertop.

Test seal after 12 hours by pressing finger on center of lid. If sealed, it will not pop back up. If not sealed, put in fridge.

*. I used jalapeños - bought small basket at farmers market (pint basket commonly used for fruit). I did not have 30 peppers! I divided what I had between 3 pint jars, cutting some lengthwise to fit.

We have not tried this sauce yet. But my Louisiana neighbors received a jar and will give me feedback once they open it. It is common in every home in the deep south, I am told.

Yes, I did recently - it was the greatest! Got a load two days after I signed up, they rang the doorbell before they dumped so I had time to run out in my bathrobe and direct them, the load of chips was really nice and smelled great. From what I hear, your mileage may vary, though. Sometimes people have to wait a long time, I think I just got really lucky.
I signed up and then got a text later that day for a drop the next morning! I'm also pretty sure that was lucky

As my AZ friend said: I want a new weather lady, this one isn't giving me the temps I want! I have my rose bush here but going to keep it inside until next weekend I think. It's currently in my front window with a couple of other things. Plenty of bright light but no direct sun right now. Pardon my dirty stove, took this pic last night after dinner.

I was supposed be up at 0330 to work on the pile of wood chips but that didn't happen. I slept until after 0530 and had to hustle to get the birds out and make coffee before work. I think everything will get a good watering tonight instead of in the morning. Most of the plants seem to do better getting a chance to soak up water over night. Nothing much outside today for me, but hubs work tomorrow and I'll definitely be outside for a while. Have a great night all!

8 year old beagle.
Her family had to let her go because they couldn't afford a major surgery. The humane society she went to could afford it either, so another society came and got her. After her surgery, another society picked her up for rehab where she has been for 4.5 weeks.

She should be about 100% in another 3 weeks or so. We just have to keep her mellow and from jumping and running and skidding on our wood floors until then. LOL.

She's a good girl. Hangs in her kennel. I grew up with beagles and love them. I figured I could tame my OCD long enough to let her live out her life well here on the ranch. :D
 
How long do you let it age? Got a recipe?

Heres the low down on the red pepper sauce, now that I have the recipe in front of me.

The recipe is courtesy of a family member, it is something they have made for awhile, and always freeze it in the end.

1.Grow really good peppers. 60% good flavored hot and 40% good flavored sweet peppers.

2. Make the pepper sauce:
Slice and remove pepper seeds (use gloves). Frozen peppers are just fine to use.

3. In a blender, add 2 1/8 oz of kosher salt, or 3 Tbsp table salt, 7 Tbsp of vinegar. Slowly add peppers to the blender until you have 5 Cups of pepper sauce. Blend until well pureed. Pour into two 20 ounce plastic bottles (re-used & clean plastic sport beverage bottles work well here).

4. Let the pepper sauce sit in fridge for a couple of weeks, then put into freezer.

Here is the pepper sauce in action today:
Poured onto seasoned pork chops - then this was covered and baked. Yum!

We will also pour onto meat and marinate then grill - nice roasted flavor.

Personaly love the Beagle breed love their voices
 
Yesterday I picked up meat chicks. We also have 3 week old male chicks in the outdoor pen...with the heat plate. I need the heat plate for the chicks, so called spouse on way home saying "Oops, forgot to remind you and teen that we need brooder set up and to come up with a somewhat enclosed space for using heat lamp for male chicks". Note that the outdoor pen is quite open on all sides. I came home to this solution:

One luffa gourd that I can find! It seems to be growing pretty well.

The gourds (5 types) have really shaded that south side of the run. MOST of the greenery is from the birdhouse gourd - it has the largest leaves.

Here is that same side... the chickens like the shade (and eating whatever gourds they can reach). We will put extra fencing here to prevent them from eating the gourds next year.

"Trombone" Butternut - this one has been steadily turning color.

The other Trombone butternut squash - doesn't seem to have gotten the memo about turning the nice butternut color, and this one is older than the other one (you can see in the background).

We planted a tree today - a Black Tupelo. It was started from seed this year at the nursery we bought it from yesterday. Hoping it grows well.
