Adding beetroot slices is more common, but I mix beetroot into meat patties sometimes.
If you harvest the luffas while they are tiny, you can eat them. This is what you do with the ones which won't beat the frost so that the plant can put its energy into maturing the big ones. If you harvest them while they are green but after they start to feel hard like wood, they will contain fibre, and it will be white and fine - great for cosmetic uses. If you let the luffas go hard and brown, the fibre will be coarser and browner - great for pot scrubbers. That's what I have been told by a friend who grew them for a while, anyway. I have a seedling which has just emerged from the soil, and some bottle gourd seedlings, too. I don't really have the space for them, but I'm going to try anyway.thanks!! Several of us were interested in growing luffa bc of @TropicalBabies! And a few of us managed to grow some, but not sure how successful. I’m not sure how successful mine will be either -I need to look up if I let it dry on the plant or bring in to dry.And I have several birdhouse gourds and need to figure out those too.

You can peel and process while a luffa green, so long as it is woody and hard.
