I try and try, once I had a great crop of spinach. I do a lot better with chard and kale.Checking my seed stash. Doing a germination test on some old spinach seed. I have a thought. Dangerous I know. If any sprout I may plant in a seed tray and transplant later. Our climate makes spinach difficult. A cold spring slows it down and the end of May it bolts. It is a race to get any to eat. Perhaps transplanting will help.
