I am going to start picking my long squash earlier way before their seeds turn hard. There is hardly any meat on the bigger ones after I cut out the seeds, so it doesn't make any sense. The smaller ones have more meat, since I don't have to cut out the seeds.
I started salting them and will keep them in a salt brine in my refrigerator. I will use them for Indian curry with meat, soups and instant saimin.
They also can be eaten raw as a side dish or as a topping for salads.
