What did you do in the garden today?

We planted three eggplants last year, black beauty, for the first time.Although we liked the eggplant I think we ended up overeating them to the point of them falling out of favor, at least for the time being. Currently placed right next to kale in our sphere.
I followed the marinated Sicilian Eggplant video that I posted earlier and have them hanging in a multilayered herb drying rack in the house. It has a perfect mild vinegar and salt taste.

I cut 5 round black beauty eggplants into 1/2-inch slices and maybe they can all fit in one or two pint mason jars after shrinking. I also infused two tsp of minced garlic into 3/4 cups of olive oil with two oregano twigs and will pour it on the air-dried eggplant slices.

This is one of the best tasting recipes I found to preserve eggplants.
