What did you do in the garden today?

We planted three eggplants last year, black beauty, for the first time.Although we liked the eggplant I think we ended up overeating them to the point of them falling out of favor, at least for the time being. Currently placed right next to kale in our sphere.
I followed the marinated Sicilian Eggplant video that I posted earlier and have them hanging in a multilayered herb drying rack in the house. It has a perfect mild vinegar and salt taste.

I cut 5 round black beauty eggplants into 1/2-inch slices and maybe they can all fit in one or two pint mason jars after shrinking. I also infused two tsp of minced garlic into 3/4 cups of olive oil with two oregano twigs and will pour it on the air-dried eggplant slices.

This is one of the best tasting recipes I found to preserve eggplants.

WOW - we have gotten 3" of rain in 4 days. I live in the Midwest. We don't get that this time of year..we don't usually get that ever! That makes 5" for the month! We have been in a drought for quite a few years and this has really made a difference . Made weeding the garden and flower beds so much easier. I'm sure I will be having some disease problems because of it. On the downside my secondary chicken run is a soupy, stinky mess. I'm grateful for my main covered run. The chickens could care less. Haha
 
I tried sprouting okra seeds from Hoss Tools in a seed tray with a humidity cover, but nothing came up and I gave up. I saw this video and decided to try again with the same packet of seeds. The only thing I did different was, I used a microwave to heat up the water and filled and emptied the water about 4 times after a minute. I let it sit in the warm water for around 5 hours and placed them in a tray with wet paper towel and covered the tray like the video. I checked the seeds the next day and all the seeds sprouted. A small step for mankind.

You bet. I had it years ago and liked it. I really like the taste of eggplant but I might be allergic to it or something. If I eat much of it it makes my mouth kind of sting or tingle a little bit. But it's worth the pain. LOL



might be sesame (tahini). try to make it with mayonnaise (or 1/2 mayo 1/2 yogurt) instead of tahini.
