That reminds me of the jars of beet brine pickled eggs my mother had in the refrigerator when I was a kid. I thought they were gross. But I think I could enjoy the flavor now.When we have excess eggs, I like to make pickled eggs simply using a can of sliced pickled beets...

I just pack a jar with the eggs, sliced beets, and the pickling juice from the can. No recipe to worry about. Pickled eggs ready in a day or two.
I like the pickled eggs and the sliced beets mainly as toppings for a lettuce salad, but they are also great as a side dish for many meals, especially a hotdish.
I also save the pickling juice from store bought pickles and just pack a separate jar with eggs and the juice. That's good, too, but I prefer the pickled sliced beets to make my pickled eggs. But variety is the spice of life and I currently have a jar of each type of pickled eggs in my refrigerator.
In any case, no recipes required. Just pack a jar with eggs and add the other ingredients. Could not be easier.

I use kosher dill juice from Claussens , then make devilled eggs from them. Takes longer though, need a good 8-10 days. If your sanitation is impeccable, you can use one jar of left over juice twice (in rapid succession). Oh my goodness. Prayers for swift healingI’m so behind on this thread. A lot has happened since my last post. I’ve been struggling with trying to get the yard and garden work caught up along with the delayed Spring cleaning. I’ve also been picking peas and wild black raspberries every day. I really need to process the peas and get them in the freezer. Saturday I was taking a big cardboard box out to the garage when I missed a step. I had a bad fall. I went to urgent care and got the head check. Tried to get the local ER to take a look and gave up on that. Tomorrow I get a CT scan and the X-rays the local hospital just couldn’t manage. Trust me, the lump where I hit my head on the concrete floor was really big. I’ve been resting a lot but still doing the must do chores. Today was my first garden walk through the big garden and the gardens on the hill. My slicing tomatoes are starting to bloom. The pole beans are growing and climbing like crazy. The SM tomato plants look like they need fertilizing but the grapes are going well with the grapes getting bigger. I planted more curly kale last week and the seedlings are breaking through the soil. I’m looking forward to plant a short season acorn squash, some summer squash and pickling cucumbers at the beginning if next week. I’ll also be pulling the lettuce and planting chard as soon as I’m done with this medical stuff.
