What did you do in the garden today?

Here's my recipe for salsa verde. Very mild, but I'm a wimp.

4 qts green tomato puree
90 grams garlic, minced*
1/2 cup chopped onion
2-3 green peppers, chopped
3-4 jalapenos, seeded (leave the seeds in if you like the heat)
1 1/2 teaspoons salt
1/3 cup lime juice

Bring everything to a boil, boil 5 minutes. Ladle into canning jars. Water bath process for 20 minutes, both half pints and pints.

* This is about 7-8 large cloves of garlic. This is my homegrown garlic; Music variety makes large cloves! View attachment 4197782

@Rick589, it's very adaptable. If you want heat, add more or hotter peppers.

I use this salsa in place of some of the liquid when I make lentil soup, and it makes a really good soup!

I also use it as salad dressing when I make taco salad.

I used to feel cheated by all the green tomatoes at the end of the season, but not any more. Now I have a good use for them.

Thanks again. That was the thought that got me thinking about salsa…..the leftover green tomatoes going to waste.

Have you ever used cilantro in any of your salsa recipes or attempts?

I spent the morning raking while the chickens dined. When they leave the feed I take what's left inside. The wild birds are baffled but the rat is gone! All i need now is a bucket composting solution.

All the violets are flowering and taste great!
