What do to with fertile eggs before you ship them?

If I wanted to sell fertile eggs and collected them at night to ship the next day or two, where would I put them? On my kitchen counter? I heard you weren't supposed to do that?
 
Did whoever told you that tell you why? Sometimes people have a legitimate reason for what they recommend but often that does not apply to anyone else. it's a lot easier to address whether you should or should not do something if there is a reason.

You do not want them in a place with extreme temperatures, one way or another. You do not want them in the sun where they can heat up or where an air vent can blow on them, coo or warm. You do not want to bang them around so they get cracked or splash water or grime of any kind on them. If your kitchen counter was the best place for this, it's what I'd do.
