What do you do when the eggs don't hatch.

I have an araucana that went missing a few weeks ago. We thought she had been taken by a predator. Then we started seeing her. I followed her about a week ago and she was in our pole building sitting on a nest. We can't remember the exact date she went missing but let her continue to sit on the eggs. I am thinking the eggs are not going to hatch. How long after the 21 days should I let her continue to sit? Once we remove the eggs (if not hatched) do we contain her in the coop until she decides she won't go back into the pole building? We no longer have the rooster so any future eggs will not be fertile. We also have some new chicks which may have a rooster in the bunch, but they have not been introduced to our established small flock.

You could always candle the eggs to get an evaluation of their status. Since you are uncertain of the exact period that she has been setting, I would give her some more time.
