EASY GUACAMOLE DEVILED EGGS

1 avocado
6 hardboiled eggs
1 lime

fresh cilantro
sea salt
pepper

Mash avocado and hard boiled eggs together. Add fresh lime juice, cilantro, salt and pepper!:thumbsup:p
 
If you ask people to save you their empty egg cartons, you'll have more than you need and you'll know who really loves getting eggs. (Giving you empty cartons is sending you a message.)
If you have a gym near you, see if they'll take the extra eggs - the Keto dieters devour a lot of eggs.
My family eats a lot of eggs - my daughter makes "muffins" with eggs, spinach and turkey sausage. She bakes them in mini-loaf pans and freezes them = instant breakfast (they microwave in seconds)
I save all the shells of all the eggs we eat and use a mini-food processor to turn them into small (1/8th inch) pieces. I spread these all around the plants in my garden. The sharp pieces are the perfect slug deterrent.

Sometimes if i have alot of extra eggs i make an angle food cake (takes about a dozen large eggs) only the egg whites.
And with the yolks i make the richest custard you have ever tasted.
I love to bake and My family loves it!

I do this, too! I made an angel food cake just last week. I make custard about once a week or so, because my kids love it (and I do, too). I make it the old fashioned way, on the stove top. Lot of work, but so creamy!
 
Pizzelles! I was "raised Italian," so these are a staple at our house. We go through them like most households go through chocolate chip cookies! You'll need a special Pizzelle iron. I got mine from Fantes, in Philadelphia.

Pizzelles
6 eggs
1 1/2 c sugar
Beat them together until they're creamy

Add:
1 1/2 tsp vanilla
1 tsp anise or almond oil
2 cups butter or margarine - melted and cooled.
Mix thoroughly

In a separate bowl, sift (I just put the dry ingredients together and whisk them):

3 1/2 c flour
4 tsp baking powder

Add to egg mixture
If you want thicker pizzelles, refrigerate the dough for about an hour before baking.

I love Pizzelle. I think I should buy an iron. I tried to find one years ago, but that was before Amazon.com.
 
For those of you that have too many eggs and make bread here is a recipe that you your family and friends will find heavenly. The how to make bread is not included just the ingredients

Egg Bread

5 T yeast (can use less but this is so tasty)
⅔ c warm water
½ c sugar
12 egg yolks
⅔ c cream
1 stick butter
½ c oil
6 eggs
1 t salt
8+ c flour

for 2nd raise Braid to shape or put in large tube cake pan
Egg wash
Bake 350° until internal T°= 200°

I make Pavlova with the leftover whites
Enjoy and you will never have too many eggs again
 
I get a dozen or more a day. I eat my eggs. Not only as eggs but I also make large batches of baked custard and eat that too. Use half the amount of sugar and it's still great. Toss in some rum and it's divine. I also sell my eggs from the house as well as take them to the local farm store which also buys my eggs for more than what I sell them for from the house (or trade in same value for chicken or dog food). If I have extra small ones, the dogs get those for treats. If you have extras, crack them open into the sections of an ice cube tray and freeze. Don't try to freeze them in the shell. Bag them up after they are frozen and seal well. You will appreciate having eggs to use in the winter when they stop laying. They are great for cooking and scrambled eggs. They don't make sunny side up fried well though.
I sell my eggs cheap at $3.00 a dozen from the house. That way, I do not have eggs sitting around. They sell fast. Sometimes, I have to save some aside for my own use. You will not have an issue with someone, ever, getting sick from your eggs if they are going out fresh. Eggs that make people sick are old, dirty eggs that have been sitting around and mishandled. If I ever wash any eggs, they go immediately into the refrigerator.
