e custard about once a week or so, because my kids love it (and I do, too). I make it the old fashioned way, on the stove top. Lot of work, but so creamy!
I mix the yolks with milk, sugar, vanilla and nutmeg and bake in a caserole dish in a pan of water in the oven.
I dont know about the stove top method.
I may do this today as talking about it is making me hungry for it.
 
There are several ways of preserving eggs. I have frozen them before in anticipation of a slow down in winter, but my birds kept churning out plenty of fresh eggs all year long and I hardly ever used them. The best outcome of freezing was with the ones that I scrambled and stored uncooked in approximately one-cup quantities. You can crack them and freeze them without scrambling but mine didn't keep their texture as well. I give away most of my fresh eggs. Whenever there is a pot luck gathering, I make large egg casseroles or maybe angel food cakes. I'd love to find a way to give them to people who have true financial barriers to fresh food.
 
EGG CUSTARD!!! We aren't breakfast eaters, but nothing beats egg custard. Just 6 eggs, 3 cups milk, a bit of sugar to taste (1/2 cup or more), a tbs vanilla, pinch of salt and top with sprinkle of nutmeg. Beat eggs first, then strain. add remaining and place in a pan. Add this pan to a pan with boiling water about halfway up, place in 320 degree oven for 40-45 minutes. Let stand for about 15 minutes then chill for 2-3 hours!! A delicious, nutritious dessert or snack you won't mind giving to the kids or the adults!! With artificial sweetener, makes good Keto diet food!! Enjoy!
 
I'm getting up to 10 eggs a day and am quickly running out of options for what to do with them. Short of chucking them, that is.

My friends are all stocked up, we are sick of eating eggs and now we have a backlog in the 20's. So, what are some things you guys do to use up those extra eggs? Today's basket (from yesterday and today)

I started making pickled eggs. You can sale them or eat them. There are some easy ways to make them. Just google it.

From what i can see if you have fewer tham 150 birds you can sell eggs from your farm with very little effort. Also i would highly recommend you check your local food pantries and churches before you throw them out. There are people who live paycheck to paycheck and would love to have them. Refrigerated eggs keep longer and the above instructions specify they must be refrigerated.
I sell and donate eggs and use the oldest ones for my family, and in 30 years have never cracked open one that was bad.

What I do for baked custard (big batch)
18 eggs and probably 3(up to 5) extra egg yolks
1 gallon of milk
2 cups of sugar (can add more) Less means it's better for you but some like it sweeter
a tablespoon of vanilla
1 teaspoon of ground nutmeg
1/2 teaspoon of salt
optional cup of good rum or bourbon .. can add more.
Teakettle of boiling water, a big casserole dish and the bottom of your turkey roasting pan.
Heat oven to 350


Whip up all the eggs in a bowl. Add everything else except the milk and stir well to mix it all.
Add some of the milk but not all of it. Stir again to mix things.
Find your largest casserole dish to hold it all :) Might be able to use the ceramic liner of a crock pot.
Pour the bowl into the casserole dish and now add the rest of the milk to fill. If you don't use the whole gallon that's ok. Stir things around to mix and to dissolve the sugar.
The casserole dish must be surrounded by water to bake. I put the roaster pan in the oven on the rack first. Then i carefully lift the casserole and set it in the roaster without spilling it.
Slide the rack in a bit and then pour boiling water into the roaster until it is at least halfway up the side of the casserole dish. Slide the rack all the way into the oven without sloshing water too much. Close door and bake for around 45 min before checking. Custard should be pretty much set by then. Test the center with a clean butter knife. If the blade comes out coated with liquid, cook it a little more.
When done, I take the casserole out of the water bath and set on the top of the stove to cool a bit before putting in the fridge. Cover the top with plastic wrap. Good warm out of the dish or cold. You can look up recipes to make smaller batches but I want to knock off a lot of eggs at a time and I have pans big enough to do it. I have also set the turkey roaster pan inside my smoker (Traeger) and cooked custard in there outside. That also works and the custard does not come out tasting smokey. :)
