I mix the yolks with milk, sugar, vanilla and nutmeg and bake in a caserole dish in a pan of water in the oven.
I dont know about the stove top method.
I may do this today as talking about it is making me hungry for it.

This is the closest I could find to the recipe I use. I tend to not measure things perfectly and experiment, but this is the base recipe. It is a little more work, but so yummy!

I just enjoy keeping the different breeds and watching them interact. And I do have intentions to start selling the eggs this year now that I'm more used to chicken keeping in general. I really didn't have much of a plan for the eggs last year so they piled up, this year I'm gathering recipes for cooking and preserving them before the chickens start to lay (I sold my laying stock from last year and started from scratch with different breeds). Whatever I can't use I'll try to sell or donate.
Well then, I agree. I love my chickens, they are lots of fun. What about donating the excess to a food bank or even a school or something like that?
 
Firstly, do not use "baby oil"!! Almost all of it is scented for one thing and most of it has other ingredients in it. If you are going to try this, use Mineral Oil. Google Mineral Oil eggs and there are plenty of posts on it. For long term storage the posts also say that you still need to refrigerate them. Mineral oil is a petroleum product and there is information stating that it also causes Estrogen issues in women ...
That’s why Mother Nature puts “bloom” on every egg. The hens coating of natural antibacterial goodness. Don’t ever wash your eggs. If they are dirty....fix the reason. Not picked up frequently-worms-dirty bedding-wet run or coop ya know.
Wipe with a damp paper towel if needed. Your eggs will stay fresher longer the way Mother Nature intended.
 
I had an aunt that would separate the whites from the yolks, then freeze them in ice cube trays. She swore they kept better this way. I have not tried it personally; but she swore by it.

As for all my extra eggs they are given to the bankruptcy clients at the family law office. We wash all of our duck eggs because the ducks some how manage to find dirt in midwinter even in a sparkling clean coop. All the gifted eggs come with the caveat that they must be refrigerated and used within 2 weeks to be extra safe.
