This has probably been said many times, but donate if possible to local food bank, depending on your state regulations and rules of the food bank in your area. I am expecting to have more eggs than I need by spring. Some we’ll eat, some go to friends and family, but the rest to a local food bank. I talked with a long time volunteer there and they take eggs. He likes seeing the variety of colors. Even had a stack of cartons to rehome from the food bank. According to my state rules, I could sell them as long as certain info is included on the carton about safe handling and such. I plan on making nice sticker labels to apply to cartons that go to the food bank. Will probably get plain cartons too - not necessary and an extra expense, but why not be proud and make it pretty and professional (ish) for the folks that need them?
 
You just go by your local regulations and food bank rules. Some even take meat like venison under certain criteria. In the US, as long as the eggs are stored in the fridge, debris removed from the shell, and fully cooked there isn’t a problem. Salmonella might be but that is taken care of by fully cooking eggs and washing shells, or at least careful handling when cracking them and storing in the fridge. My plan is to use cartons with the safe handling notation.
 
I agree that the risk of someone actually getting sick is probably pretty low, but if it were to happen, it'd have the potential to turn into a pretty nasty situation.
I’m pretty sure that in the US there are Good Samaritan laws that protect people who donate items and food stuffs to a legitimate charity. As long as the items were given in good faith with no intention of harm you aren’t responsible.

Yeah, but I don't think that covers eggs that are sold, which is what my original comment was in reference to.

I understand that, however I didn’t want people to read that and not donate to charity. I feel that charitable donation is probably the best thing you can do with extras, and hungry people will enjoy them more than any other recipients would.
 
I had issues with a volunteer stealing, & a Boss lady justifying such, when I donated to a food bank. I recently found the puppy I brought home a couple months ago, had been EATING eggs. Back up to about 9 eggs for a dozen hens. He took out a few hens also. He's much better now. An Irony, my mechanic mentioned the great tasting eggs, so have One more customer...:celebrate:thumbsup
All of my customers are in the nearest 'big city'. They already save cartons for me, buy store bought when I cannot make it in..
