I usually freeze eggs in batches marked for specific uses. My FAVORITE S are lemon and lime curds. When the fruits are in season, I make big batches. (Or you can do the reverse: freeze the juice and make the curd in spring.)

Other faves that use a lot of eggs: French toast, frittata, quiche, Dutch pancakes, crepes, Angel food cake.
We tend to have "breakfast for dinner" a lot :)

You can freeze eggs. The best way is using a freezable mason canning jar. I have pints ones, it will hold 6 to 8 eggs. You crack your eggs into the jar and scramble each one. Add a 1/2 tsp of salt to the jar and put the lid on and freeze. I do find however when it is time to use them they are good for about 3 days in the refrig. When thawed, scramble them again. I use them in quiche, cakes, ect. Not the best scrambled. I didn't like the texture.

To use the thawed frozen scrambled egg use 3tbs for 1 egg in the recipe you are using.

I actually don't eat many eggs myself bur I love having chickens. The feed store was selling farm range eggs for 3 bucks a dozen but I enjoy giving mine away.

My nephew said the nicest thing when he visited a few weeks ago. He said that he couldn't tell the difference between supermarket eggs and eggs from the farmer's market but that my yokes tasted like...he paused...sunshine. I know why. My hens are free range.
 
Both of my dogs just love the eggs. Right now, only have three hens so don't get that many eggs. Previously, when I had up to 7 hens, the dogs looked forward to a daily egg each. When I call out " Who wants an egg?" They both come running. Their coats are shiny and their eyes clear. I think it is the eggs.
 
I'm sure I've probably responded in this thread at some point in the past, but oh well...
We get far more eggs than we use. We take them to work and give them to coworkers. Throw one on top of the dogs' food now and then. Feed some back to the chickens. It's not hard to get rid of fresh eggs. A couple of days ago I noticed we were up to 10 dozen in the fridge. Within two days that was cut to 2 dozen. I could sell them, but in a rural area like I live everyone sells eggs, so I could probably get $3.50 a dozen based on the fact that they are free range and I have a variety of colors in my egg boxes. For $3.50 I'd rather give them to friends and make them happy.
 
I'm getting up to 10 eggs a day and am quickly running out of options for what to do with them. Short of chucking them, that is.

My friends are all stocked up, we are sick of eating eggs and now we have a backlog in the 20's. So, what are some things you guys do to use up those extra eggs? Today's basket (from yesterday and today)

You can make powdered eggs which keep a long time and are good in baked goods.
We make a recipe called creamed eggs and it uses quite a few eggs.
You might even try to make pickled eggs. They last for many months.
We took some to our local food pantry a while back.
Glad your chickens are so ptoductive!
