What do you do with your extra eggs?

Give 'em away. There are always hungry people out there. If you've got a surplus of food that you can't eat and don't need to sell, it would be a shame to do anything else.
 
My son frequently stays at his friends house in town. Sometimes 2 or 3 days a week. The Mom is such a sweet lady and would never ask me for anything. So when I make my egg run to town for my customers, I always drop off what ever extra I have at her house. I must have gotten carried away this week though. DH was mumbling at me yesterday when he wanted to make scrambled eggs for breakfast and we only had 4 eggs!! Our girls give us at least a dozen a day!!
 
you can mix them up like scrambled eggs, put them in a bag, and freeze them. They will work for breakfast in the winter or egg for recipes.

Also you can try pickling them.
 
Make yourself a plan on how to sell them. I can sell ALL my little hens will lay, and I am going to add to them, and I actually make a little money. Not much, when you count the costs.

I clean them up, and any that I have had to wash I rub with food quality mineral oil to replace the bloom.

I put them in lovely clear plastic cartons so the buyer can see how pretty they are. I get these from Eggcartons.com.

I have my own labels on them, also pretty.

Sometimes I include a little newsletter describing how they get to wander about eating nutritious bugs and so forth. And how much healthier eggs from free range chickens are.

So far, everybody LOVES my eggs. They are all different colors.

And yes, I do give some away. And I feed some to the dogs and cats. Not too many as it seems to upset their tummies for some reason.
 
Dogs get all the extras here too. They all come running when I come out of the chicken house to get their "treats".
