What do you like on your omlets?

Me and my family love a chillie, cheese, and onion omelet.
My other favorite is a shrimp, onion, green pepper, cheese, mushroom omlete.

These are both so good....now I want one.
 
On my omlets i just have to have : diced onions, mexican chorizo ,and cheese .

I make them with whatever I have handy. And with garden season coming soon.. that will mean LOTS of GREAT stuff!!

All sorts of veggies. Cheese is a must for me ( dont' need the calories, but there's something about cheese and eggs that is a must-have)

I like to saute or steam my veggies before putting them in the omelette-- I don't really like the whole multi-texture thing with crunchy veggies/ soft eggs.

Right now-- lots of asparagus and cheddar omelettes, since asparagus is in season for me. Very soon will be spinach, herbs, broccoli, tomato-- whatever comes in season. I like meat in them too, but usually only when I've got leftovers ( ham, sausage -- or lunch meat that I need to use up).

The possibilities are endless-- open your fridge, pantry, or run to the garden and see what you've got!!! Try a little, try a lot-- but try it all

...now I can't wait for breakfast... I have asparagus I cut today, chilling in the fridge in a dish of water... Yum..... that's what it'll be tomorrow!! ( or tonight if I don't go to bed soon!

I love a good pizza Omelet...YUM! when you get your egg spread, let it harden up a bit, throw down some sliced ham, add some tomato sauce, (Ragu thickn chunky!) a lil Moz. cheese & some pepperoni, & then burrito style the folds, & you've got yourself an A1 Omelet! & you can add a lil' of the ingredients to the top of the omelet to allow athsteticly pleasing & differentiation...
 
Powdered chipotle' or crushed red pepper, sweet peppers, peeled chiles, onions, bacon, ham, sharp cheese. Not all at once or maybe everything together.

Then there are frittatas, quiches, and breakfast casseroles...
 
I like cheese on my omlets. Also i like two or three different kinds. Like mushrooms,onions and tomatoes.
