Their voice will tell you, go to youtube and type in guinea fowl sounds and you can learn how to tell.

Do you have peafowls also?
We have a guinea fowl section on BYC also, lots of folks over there talking about guineas.

Zazouse is right, the only way to tell for sure is by the sound they make. The females make a two syllable sound "buck-wheat, buck-wheat", the male don't.
