What is the best breed to start out with?

Well if you're in KY, you should get Bourbon Reds (which were developed in KY). Mine have never been flighty and do not leave the 4 ft. fence where they live with the chickens. Where I live (in TN) people are crazy about BR - they're big table birds, hardy, and friendly.

I have a bunch of cross breeds ( heritage) and all of my hens are setting on eggs. Soon to be over run with turkeys.
