What is the difference between Brahma's and Cochins, large fowl?

I own a Dark Brahma, and she is just as calm and friendly as my Cochins. Which are all very easy to handle and pick up when wanted or needed, Breed does play a role in the personality but if started handling the birds at a young age most wll be friendly some more then others.
