Buy a all chicken in the supermarket, or in botchers shop, all chickens must be di gutted( because Salmonella) Di headed, and without their shanks! When I was a little boy I remember that my grandmother RIP, use to make a leftover chicken soup, made from wings, throats and very clean chicken shanks and the where delicious! Now I know that all the poultry shanks are exported to Thailand and Vietnam where there considered a delicacy!
