I've had good luck with Roos, but I'm pretty no-nonsense when dealing with the silly cluckers. Not the least bit afraid and not willing to put up with any guff.
I usually get them across the neck and push/hold them down... not in a rough or mean way, but defenately harshly enough so they can't escape. They seem to understand that being held down like that means I'm dominant. Rooster-Red's info makes sense too though, I'd do any of it in a heartbeat especially if it meant keeping the bird and the people around him safe in the long run.
I do have to wonder why a 1.5 foot (or so) tall bird thinks they can take on a 6 foot tall person though!!!
[edit] Yes, sometimes being firm but nice convinces them that you're no threat too, holding them -UP- and petting them must be kinda wierd/scary/nice, must make you seem like the big magical person who can suspend them in space! *insert wierd outerspace noises here*
