I am forever looking for great recipes and would love the input from different parts of the country. Anyone care to share theirs?
Here's my family favorite I have made it for years and love it! I think I got it off of Allrecipes or Recipezaar.
Flawless Sesame Chicken
*3 whole boneless chicken breasts
Marinade
* 2 tablespoons light soy sauce
* 1 tablespoon cooking wine or dry sherry
* 3 drops sesame oil
* 2 tablespoons flour
* 2 tablespoons cornstarch
* 2 tablespoons water
* 1/4 teaspoon baking powder
* 1/4 teaspoon baking soda
* 1 teaspoon vegetable oil

Sauce
* 1/2 cup water
* 1 cup chicken broth
* 1/8-1/4 cup white vinegar or rice wine vinegar (depending on how sweet you want the sauce)I use the rice wine vinegar.
* 1/4 cup cornstarch
* 1 cup sugar
* 2 tablespoons dark soy sauce
* 2 tablespoons sesame oil
* 1 teaspoon chili paste (or more)
* 1 garlic clove (minced)

Frying
* peanut oil (3 1/2-4 cups) I never need/use this much
Serving
2 tablespoons toasted sesame seeds
Directions
1.Cut the chicken into 1-inch cubes. Mix the marinade ingredients (the first 9 ingredients listed) and marinate the chicken for 20 minutes.
2.To prepare the sauce:.
3.Mix together all of the sauce ingredients (the LAST 9 ingredients beginning with water). Pour them into a small pot and bring to a boil, stirring continuously. Turn the heat down to low and keep warm while you are deep-frying the chicken.
To deep-fry the chicken:.
4.Add the marinated chicken pieces a few at a time, and deep-fry until golden brown. Drain on paper towels and then place chicken in warm oven (130 degrees) while you continue frying. Repeat with the remainder of the chicken. Just before you are finished deep-frying, bring the sauce back up to a boil.
5.Place the chicken on a large platter and pour the sauce over. Sprinkle with sesame seeds.
I usually serve with sticky rice and steamed broccoli.

Ok I will add another that we love here also, it is perfect on homemade pizza and dipping sauce for breadsticks. Hope you like it as much as we do!

Pizza/Dipping Sauce
I always triple or more the sauce and stick portions in the freezer for future use.
* 2 tablespoons olive oil
* 1 tablespoon butter
* 1/2 cup onion, chopped
* 1/4 cup celery, chopped (I have subbed a little celery salt when needed)
* 1 garlic clove, minced
* 1 (8 ounce) can tomato sauce
* 1 (6 ounce) can tomato paste
* 2 tablespoons grated parmesan cheese
* 1 teaspoon dried basil
* 1 teaspoon dried oregano
* 1/2 teaspoon salt
* 1/2 teaspoon sugar
* 1/4 teaspoon black pepper
* 1 small bay leaf
* 1 teaspoon fennel seed
Directions
1.In a large skillet, melt butter with the oil. Add the onion, celery and garlic and saute until
soft and transparent.
2.Add tomato sauce and tomato paste and stir until smooth.
3.Add remaining ingredients and bring to slow simmer.
4.Simmer for 30-60 minutes.
5.Remove the bay leaf and use for pizza or dipping

It takes time and a deep lasagna pan, but wow, is it worth it.
 
Black beans and rice

2 Tablespoons olive oil
2 cans of black beans
1 large onion
1 green pepper
1 Tablespoon cumin
1 teaspoon curry
2 cups diced tomatoes

serve with rice
