What is your favorite homemade jelly?

Mayhaw Jelly

4 cups mayhaw juice
5 cups of sugar 1/2 teaspoon butter
1 package of pectin

Bring the mayhaw juice, butter and pectin to a rolling boil. Add sugar and bring to boil that can not be stirred down, continue to boil for 1 minute. Remove from heat and skim off foam and ladle into hot jars. Seal with lids and bands, turn upside down for 5 minutes.
 
I love wild blackberry jam.

This recipe became a favorite when I tried it last summer. I don't like marmalade, and though it looks like marmalade, it has a mellow flavor.

Zucchini Jam

3 c zucchini, grated
1/2 c lemon juice
3 c sugar
1 small box apricot gelatin

Peel and remove seeds from the zucchini before grating. Boil grated zucchini, lemon juice, and sugar together for 30 minutes. Add gelatin and remove from heat. Don't let it boil again. Pour into jars and seal.
