Oh, I love this soup as well! It is soooo good!

Cover diced potatoes, one small onion diced and one carrot shreaded with water and boil til all is soft. Add one chicken bullion cube and stir til disolved. Place in the blender until creamy. Return to pot, add salt and pepper to tast and stir in a cup of shreaded cheddar cheese and a few dallops of sour cream.

YUM!!!

In fact, I am eating a bowl of potaot soup now, minus the sour cream and cheese cause I didn't have any, lol.
