Last year we did 80ish. Simple A frame tin roof attached to north wall of other chicken house. With a 8x12 or so run. Only issue were 1 low spot in covered area held water with heavy rain. And 2nd since I am sole processor when birds got a little larger they did tend to hop clear since I made no covering. Did have a Australorp rooster that liked to accompany them on a daily basis. I processed when I felt like it. Generally 5-10 at a time. Within a few weeks, starting with the largest males 1st and move down the size ladder.
Since I am only one doing work I don't mind growing them farther along than other people. As a matter of fact I have 3 hens still I want to try breeding. With that and almost free food last year it wasn't, or rarely is the economic aspect. 3 people in family cannot eat store bought chicken, or eggs w/o great discomfort or even getting physically sick. But my home grown never give anyone issues.
Needless to say the coop and run area have a 3 inch layer of fertilizer but that goes into the garden compost with all the other organics from house/animals.
