What made you happy today?

On the ride home I got chased down by 2 frenchies and a pug who wouldn't leave until I pet them. Owners were apologetic and came and got their dogs. Can't say I was upset at all though :D
You should have stolen them. Sent me the 2 dummies and sent @room onthebroom the pug!
 
Made some egg fried rice for breakfast this morning and while not authentic (I didn't have all the ingredients on hand) it was so good. I'll make some rice later so I can have it again tomorrow morning! (From watching uncle roger on yt I learned that egg fried rice should be made with cold leftover rice for best results else it won't crisp up properly)
The best "cheat" I found for making authentic-tasting fried rice is gyoza sauce (for potsticker dumplings.) It's the closest thing to good takeout!
 
Nothing complicated, just some day old rice sautéd with some garlic and onion in vegetable oil and 3 eggs mixed in. After it cooked I added soy sauce, smoked paprika and ground ginger. There are better recipes but that's what I had on hand ATM and I was in a bit of a rush
You can add mixed veggies to your rice, too. If they're fresh/frozen, just saute them with the onion to soften them a bit. Canned just gets added just before The eggs get scrambled. Do you scramble them up right in the pan or add them fully cooked? If you haven't tried frying them in the same pan, I highly recommend it! Just push your rice mixture out to the edges and pour your raw scrambled egg into the center to cook. You can add a dash of soy then too, if you want. As the eggs cook, just stir them quickly into the rice. It's amazing!
We're big rice eaters, here. I keep it ready-to-go in the fridge pretty much all the time ... and you're right about using pre-cooked, cold rice. It gives you a better texture!

Additional thought - a scoop of the finished product and a little bit of chicken, beef or veggies makes a great packed lunch. People always think I ordered take-out!

You're forgetting the oyster sauce.

Mixed vegetables have peas which are one of the only vegetables I don't like (that and while i like carrots, they are awful canned. If I need cooked carrots I will cook them fresh), so I don't keep mixed vegetables on hand
And yes, I scrambled the eggs with the rice and I did add soy sauce. I was in a hurry so no time to cook up any meat (it's all frozen anyways) and the only fresh vegetables I have ATM are acorn squash, tomatoes, onions and garlic (which I did add onion and garlic). Whenever I go shopping again I'll get some more vegetables that would actually work (I love both tomatoes and acorn squash but not in egg fried lol) as it certainly would improve it and I absolutely will serve meat with it :D
