What makes a bird “heritage”?

Here's a Heritage Plymouth Barred Rock, rooster of mine. They're very different from the regular hatchery quality Barred Rocks.

I was told that the Ameraucanas are EEs, so I'm not sure how that works.
Ameraucanas are a pure breed, are accepted in the APA, and have several recognized varietes. They have white skin, a beard, and slate legs.

EEs are just mutts that are known to lay colored eggs. They can be offspring of CCLBs, Amerucanas, or just crosses of other EEs.

They are not the same.
